Ingredients

  1. Chicken mix boti - 1 kg (cut into pieces)
  2. Coriander powder - 1 tablespoon (Dhania powder)
  3. Himalayan pink salt - 1 ½ teaspoons (or to taste)
  4. Kashmiri red chilli powder - 1 ½ tablespoons (Kashmiri lal mirch)
  5. Turmeric powder - ½ teaspoon (Haldi powder)
  6. Cumin powder - 1 teaspoon (Zeera powder)
  7. Black pepper powder - ½ teaspoon (Kali mirch powder)
  8. Carom seeds - ½ teaspoon (Ajwain)
  9. Garam masala powder - 1 teaspoon
  10. Red chilli powder - ½ tablespoon (Lal mirch powder, or to taste)
  11. Cardamom powder - 1 teaspoon (Elaichi powder)
  12. Cashew nuts - 12-15 (powdered)
  13. Tomatoes - 3 medium (pureed)
  14. Yogurt - ½ cup (whisked)
  15. Onion - 1 cup (fried & crushed)
  16. Green chilli paste - 1 tablespoon (Hari mirch paste)
  17. Ginger garlic paste - 1 tablespoon (Adrak lehsan paste)
  18. Vinegar - 2 tablespoons (Sirka)
  19. Green chilli sauce - 1 tablespoon
  20. Red chilli sauce - 1 tablespoon
  21. Soy sauce - 2 tablespoons
  22. Cooking oil - ¼ cup
  23. Curry leaves - 10-12 (Curry patta)
  24. Water - ¼ cup (or as required)
  25. Green chillies - 2-3
  26. Fresh coriander - to garnish (chopped)

Instructions

  1. Marinate the Chicken: In a bowl, add chicken, coriander powder, pink salt, Kashmiri red chilli powder, turmeric powder, cumin powder, black pepper powder, carom seeds, garam masala powder, red chilli powder, cardamom powder, cashew powder, tomato, yogurt, fried onion, green chilli paste, ginger garlic paste, vinegar, green chilli sauce, red chilli sauce, soy sauce and mix well. Cover and marinate for 2 hours.
  2. Cook the Chicken: In a wok, add cooking oil and curry leaves, then add the marinated chicken. Mix well and cook on medium flame for 4-5 minutes.
  3. Simmer: Add water and mix well. Cover and cook on low flame until chicken is tender (about 25-30 minutes), checking in between.
  4. Finish and Serve: Add green chillies and fresh coriander. Garnish with fresh coriander and serve!
