Instructions

  1. Prepare the rice broth: Measure 1/4 liter rice and 1/2 volume chicken broth (1/2 cup). Add 5 g salt and 2 g pepper to broth. Bring to boil, then simmer covered for 20 minutes.
  2. Prepare the chicken: Cut each chicken piece in half for faster cooking. Season with salt and pepper. Dredge chicken pieces in flour evenly.
  3. Cook the chicken: Heat pan to 240°C (464°F) with duck fat. Place chicken pieces in pan and cook until lightly colored and golden, turning occasionally for even cooking.
  4. Make the honey sauce: In the pan, add garlic parsley butter, rice vinegar, soy sauce, and honey. Stir and reduce sauce until it coats the chicken well.
  5. Prepare the vegetables: Cook light vegetables by plunging and turning them until tender.
  6. Finish the rice: Add a final touch of sesame oil to the cooked rice and mix well.
