  2. Aubergines - 200 g (sliced about 0.5 cm thick)
  3. Courgettes - 200 g (sliced about 0.5 cm thick)
  4. Cuore di bue tomatoes - 200 g (sliced about 0.5 cm thick)

  7. Stracciatella cheese - 70 g (to stuff the piadella)

  11. Cherry tomatoes (datterini) - 500 g (for the tomato sauce, halved)

Instructions

  1. Prepare Cherry Tomato Sauce: Cut cherry tomatoes in half and place them cut side up on a baking tray. Season with olive oil, salt, sugar, and dried oregano. Roast in the oven at 100°C for 1 hour and 30 minutes.
  2. Grill the Vegetables: Slice aubergines, courgettes, and cuore di bue tomatoes about 0.5 cm thick. Grill them on a very hot grill until cooked. Season with olive oil, salt, dried oregano, and fresh basil, then mix well.
  3. Blend Tomato Sauce: Blend the roasted cherry tomatoes with a little water until smooth to create the sauce.
  4. Heat Piadella Flatbreads: Heat the piadella flatbreads in a pan for 90 seconds on each side.
  5. Assemble Piadella: Stuff the warmed piadella with the cherry tomato sauce, tufts of stracciatella cheese, and the grilled vegetables.
  6. Serve: Serve immediately and enjoy the flavorful combination.
