Instructions
Prepare Apples: Peel and quarter four Granny Smith apples.
Make Caramel: In a pan, combine 250g of sugar and a splash of water. Let it brown, then add a spirited tablespoon of rum and flambe it to create a spiced caramel.
Cook Apples in Caramel: Cook the apples in the caramel for 5 to 8 minutes to release their moisture.
Assemble Tarte Tatin: Arrange the caramelized apples in a cast iron skillet, top with puff pastry, and tuck in the edges.
Bake: Bake at 350°F for about 25 minutes.
Serve: Invert the Tarte Tatin onto a plate, patch up if necessary, and serve with vanilla whipped cream.
