Instructions

  1. Soak the Vermicelli: Soak the bean vermicelli in warm water until softened. Drain completely.
  2. Season Vermicelli: Season the vermicelli with oyster sauce, light soy sauce, salt, and sugar.
  3. Prepare Garlic Paste: Peel, smash, and chop the garlic into a fine paste along with the white parts of the green onion and ginger.
  4. Heat Oil: Heat cooking oil, then pour it over the garlic, onion, and ginger paste.
  5. Season the Paste: Season the paste with salt, sugar, light soy sauce, oyster sauce, white pepper, sesame oil, and cornstarch.
  6. Prepare Shrimp: Devein the shrimp with a toothpick, cut open the back shell, and slice halfway into the meat. Add the garlic paste to the shrimp.
  7. Assemble: Place the shrimp on top of the seasoned vermicelli.
  8. Steam: Steam the shrimp on high heat for 6 minutes.
  9. Garnish and Serve: Uncover, sprinkle on some green onion greens for garnish, and serve.
