- salt - 1 large spoon (for soaking water)
- cornflakes - watch the video to see (very fine ground, or panko or fine breadcrumbs)
- Knorr Vegetarian (spicy) - watch the video to see (optional)
- flour - 1/2 cup
- water - 1/4 cup
- egg - 1
- salt - 1/4 teaspoon
- black pepper - 1/4 teaspoon
- paprika - 1/4 teaspoon
- cumin - 1/4 teaspoon
- coriander - 1/4 teaspoon
- olive oil - watch the video to see (for oven method)

Instructions
- Prepare Eggplant: Soak sliced eggplant in water with a large spoon of salt for 20 to 30 minutes.
- Prepare Coating Mixture: Mix ground cornflakes or breadcrumbs with optional Knorr Vegetarian spice. In another plate, mix flour, egg, water, salt, black pepper, paprika, cumin, and coriander.
- Coat Eggplant: Drain and dry eggplant slices. Dip each piece first into the liquid mixture, then coat with the cornflakes mixture.
- Cook Eggplant: Choose either to air fry at 180°C for 10-15 minutes, bake in the oven at 200°C for 20 minutes with olive oil, or fry in oil until golden and crispy.
- Prepare Ranch Sauce: Mix a spoonful of light mayonnaise, a spoonful of yogurt (regular or Greek), one clove of chopped garlic, juice of half a lemon, parsley (or dill), and a sprinkle of salt and black pepper.
