Instructions

  1. Prepare the Clay Pot: Add soaked rice, oil, and hot water to the clay pot. Cover with the lid and turn the heat to medium.
  2. Cook the Rice: Once the rice has absorbed most of the water, add the toppings (Chinese sausage, chicken, and shiitake mushroom) and let it cook for 5 to 10 minutes on low heat until you hear a crackling sound.
  3. Create the Crispy Crust: Turn the heat up to medium. Firmly grip the pot handles, tilt one side of the pot to squash the rice for several minutes, then repeat on the other side for another couple of minutes.
  4. Serve: Remove the lid, appreciate the aroma, and serve immediately.
