sourdough bread - watch the video to see (panicasa or similar sour bread, sliced)
fresh tomatoes - watch the video to see (cut directly in the bowl)
garlic - 1-2 cloves (crushed and peeled)
fresh basil leaves - watch the video to see (torn by hand, not chopped)
salt - to taste (to taste)
black pepper - to taste (freshly ground, to taste)
extra virgin olive oil - watch the video to see (very generous amount)
Instructions
Prepare Tomatoes and Seasoning: Cut the tomatoes directly into a bowl. Crush the garlic and add it to the bowl with the tomatoes. Add torn fresh basil leaves by hand, avoiding chopping boards to preserve flavor. Season with salt and freshly ground black pepper.
Add Olive Oil and Rest: Pour a generous amount of extra virgin olive oil over the tomato mixture. Let the mixture rest for at least 5 minutes, preferably up to an hour, to allow flavors to meld.
Toast the Bread: Toast slices of sourdough bread until crisp and crunchy.
Rub Garlic on Bread: Remove the skin from a garlic clove and rub it over the toasted bread slices to impart flavor.
Assemble Bruschetta: Spoon a generous portion of the tomato mixture onto each slice of bread. Optionally, add more fresh basil on top before serving.
