Instructions
Season and Sear Chicken: Season the chicken thighs with salt and pepper, then sear them in unsalted butter until golden. Remove from pan.
Sauté Onions and Garlic: In the same pan, sauté the diced onions and minced garlic.
Add Spices and Liquids: Add Mexican oregano, chicken stock, chipotles in adobo, and heavy cream to the pan.
Blend and Simmer: Blend the sauce mixture for a minute before adding it back to the pan along with the seared chicken thighs. Cook for about 45 minutes until the sauce thickens.
Serve: Serve the chicken with white rice or fresh tortillas, garnished with cilantro leaves and a squeeze of lime juice.
