Ingredients

  1. chicken breast - watch the video to see (cut into smaller pieces and marinated overnight)
  2. oil - very little (for stir-frying chicken)
  3. carrot - watch the video to see (thinly sliced using mandolin slicer)
  4. cabbage - watch the video to see (thinly sliced using mandolin slicer)
  5. mayonnaise - watch the video to see (for sauce base)
  6. ketchup - watch the video to see (jalapeno and ghost pepper ketchup for heat)
  7. sweet barbecue sauce - watch the video to see (to add sweetness and flavor to sauce)
  8. tortilla wraps - up to 50 wraps (for wrapping the shawarma)

Instructions

  1. Marinate and prepare chicken: Cut chicken breast into smaller pieces, season, and marinate overnight in the fridge.
  2. Stir-fry chicken: Stir-fry the marinated chicken pieces in very little oil until golden brown. Transfer cooked chicken to aluminum foil and stir-fry the second batch.
  3. Prepare vegetables: Thinly slice carrot and cabbage using a mandolin slicer and set aside.
  4. Make the sauce: In a bowl, mix mayonnaise, jalapeno and ghost pepper ketchup, and sweet barbecue sauce. Adjust seasoning as desired.
  5. Combine filling: Mix the stir-fried chicken pieces with the sliced vegetables. Pour in the prepared sauce and mix everything together thoroughly.
  6. Wrap shawarma: Lay a tortilla wrap flat, scoop some filling onto it, and wrap tightly without overfilling to avoid difficulty in wrapping.
  7. Grill the wraps: Place the wrapped shawarma directly onto a grill, grill pan, or electric grill to seal the wrap and give it a golden brown color, about 5 minutes.
  8. Serve: Wrap grilled shawarma in foil paper to keep warm and serve.
