- tomatoes - 2 (diced)
- black beans - 1 cup (pre-cooked or canned)
- green onions - 1 oz (28g) (chopped)
- tortillas - 4 (flour or corn)
- cheese blend - 2 oz (57g) (Mexican style: cheddar, Monterey Jack, Asadero, Blanco)
- avocado - 1 (sliced or diced)
- small onion - 1 (chopped)
- enchilada sauce - 1-2 Tbsp (for flavor)
- olive oil - 1 Tbsp (for cooking)
- sour cream - 1 Tbsp (for topping)

Instructions
- Prepare Ingredients: Dice tomatoes, chop green onions and small onion, slice or dice avocado. Cut chicken breast into pieces.
- Cook Chicken: Heat olive oil in a skillet over medium heat. Add chicken pieces and cook until browned and cooked through. Season with taco seasoning and salt.
- Add Vegetables and Beans: Add chopped onion, tomatoes, and black beans to the skillet with chicken. Stir and cook until vegetables are tender.
- Add Enchilada Sauce and Cheese: Stir in enchilada sauce and sprinkle cheese blend over the mixture. Cover and cook until cheese melts.
