Instructions

  1. Prepare ingredients: Chop all vegetables including onion, carrot, sweet potato, potato, pumpkin, and ginger. Prepare chicken pieces.
  2. Start the soup base: In a large pot, add chicken, onion, garlic, thyme, parsley, and ginger. Cover with water or chicken broth and bring to a boil.
  3. Add vegetables and spices: Add carrot, edeto (pigeon peas), sweet potato, potato, pumpkin, and scotch bonnet pepper to the pot.
  4. Simmer soup: Reduce heat and let the soup simmer for about 45 minutes until the chicken is cooked and vegetables are tender.
  5. Add spinach and season: Add fresh spinach to the pot and cook for a few more minutes until wilted. Season with salt and black pepper to taste.
  6. Serve: Ladle the soup into bowls and serve hot.
