Ingredients

  1. butter - 1 tbsp (for frying)
  2. pineapple - ½ (peeled and diced)
  3. prepared sauteed garlic - 1 tsp (from previous steps)
  4. remaining butter - 1 tsp (for frying)
  5. salt - watch the video to see (to taste)
  6. cooked egg trimmings - watch the video to see (chopped)
  7. cooked rice - 2 cups (prepared)
  8. tender coriander stems - 1 tbsp (finely chopped)
  9. spring onion - 1 tbsp (chopped)
  10. prepared garlic sauce - 1 tbsp (optional)
  11. black peppercorns - ½ tsp (crushed)

Instructions

  1. Cook Pineapple: In a wok, melt butter, add pineapple, and cook for 1 minute.
  2. Fry Rice: Add prepared sauteed garlic, remaining butter, salt, cooked egg trimmings, and cooked rice, and toss on high flames for 2-3 minutes.
  3. Finish and Serve: Mix in tender coriander stems, spring onion, garlic sauce, and crushed black peppercorns. Transfer to a serving bowl and garnish with coriander sprig.
