  4. ground pepper - to taste
  5. onion - 1 (divided for meatballs and broth)
  6. tomato - 1 (for meatballs)
  7. mint - a little
  8. egg - 1
  9. cilantro - a little
  10. zucchini - 2
  11. carrots - 2
  12. potatoes - 2
  13. corn - watch the video to see (on the cob)
  14. tomatoes - 4 (for broth)
  15. piece of onion - 1 piece (for broth)
  16. garlic cloves - 3 (for broth)
  17. salt - to taste

Instructions

  1. Prepare the broth base: Chop 4 tomatoes, a piece of onion, and 3 garlic cloves. Blend these with half of the chipotle pepper, salt, and water to create the broth base.
  2. Cook vegetables: Chop zucchini, carrots, potatoes, and corn into large pieces. Add to a pot with a little oil, salt, and water. Let it cook.
  3. Make meatball mixture: Combine ground beef, chopped onion, tomato, mint, cilantro, an egg, half of the rice, ground pepper, and a bit of salt. Mix well.
  4. Form and cook meatballs: Form the meat mixture into meatballs. Once the broth is boiling, add the meatballs to cook.
  5. Combine and simmer: After adding the meatballs, incorporate the blended broth base into the pot. Let everything simmer together until the vegetables and meatballs are cooked through.
