Ingredients

  1. rice - 1.5 cups (cooked and rinsed to remove starch)

  3. beef liver - 1 lb (rinsed, sliced thin, then diced after searing)
  4. oil - 2-3 tbsp (for frying beef liver and frying rice)

  7. paprika - watch the video to see (to season beef liver)
  8. thyme leaves - watch the video to see (used in beef liver seasoning and fried rice)
  9. onion - 1 cup (diced)
  10. mixed vegetables - 1 cup (carrots, sweet peas, sweet corn, green beans)
  11. chicken stock powder - 2 teaspoons (seasoning powder)
  12. cayenne pepper - 1/4 teaspoon (add to taste for heat)
  13. ginger root - 1/2 inch piece (grated)
  14. curry powder - 2 teaspoons (adds signature Nigerian fried rice flavor)

Instructions

  1. Prepare Rice: Rinse the rice a couple of times to remove excess starch. Add rinsed rice, salt, and water to a cooking pot. Cover and cook until the rice is tender and grains are well separated.
  2. Prep Vegetables and Beef Liver: Dice carrots and onion into small cubes. Peel and set aside ginger. Slice beef liver thinly, pat dry to remove moisture.
  3. Sear Beef Liver: Preheat oil in a pan. Place beef liver slices one at a time without overcrowding to sear, not boil. Season with salt, black pepper, thyme leaves, and paprika. Cook for 3-5 minutes on each side until seared. Remove from pan and dice into small cubes.
  4. Fry Onions and Vegetables: Heat oil in a pan. Fry diced onions for 3-5 minutes until translucent. Add mixed vegetables (carrots, sweet corn, green beans, sweet peas). Season with chicken stock powder, salt, and cayenne pepper. Grate in ginger and stir to coat vegetables with seasoning.
  5. Add Spices and Beef Liver: Add curry powder and thyme leaves to the vegetables. Stir in the diced beef liver. Cook for about 1 minute or until flavors combine well.
  6. Combine with Rice: Add the cooked rice to the pan with vegetables and beef liver. Stir well to combine and heat through. Adjust seasoning to taste and serve hot.
