Ingredients

  1. nutri - 1 kg (1 kilo, soaked in boiling water)
  2. mustard oil - 2 tablespoons (for frying)
  3. potatoes - 2 medium (boiled and cut)
  4. Kashmiri red chili powder - 1/2 teaspoon (for seasoning)
  5. turmeric powder - 1/4 teaspoon (for seasoning)
  6. onion - 1 large (thinly sliced)
  7. green cardamom - 2 pods (for hot spices)
  8. thick cardamom - 1 pod (for hot spices)
  9. cumin seeds - 1/2 teaspoon (for hot spices)
  10. asafoetida - a pinch (for flavor)
  11. star anise - 1 (for flavor)
  12. green chilies - 2 handfuls (finely chopped)
  13. ginger - 2 teaspoons (crushed)
  14. garlic - 2 teaspoons (crushed)
  15. tomato - 1 large (chopped)
  16. coriander powder - 1/2 teaspoon (for seasoning)
  17. red chili powder - 1/2 teaspoon (for seasoning)
  18. roasted cumin powder - 1/4 teaspoon (for seasoning)
  19. garam masala - 1/4 teaspoon (for seasoning)
  20. salt - 1 teaspoon (to taste)
  21. curd - 1/2 cup (fresh, whisked)
  22. water - 1.5 cups (hot, for cooking)

Instructions

  1. Prepare Nutri: Soak nutri in boiling water for 10 minutes until soft, then squeeze out excess water.
  2. Fry Potatoes and Nutri: Heat mustard oil in a pan, add nutri and boiled potatoes, season with Kashmiri red chili powder and turmeric, and cook for 4-5 minutes.
  3. Fry Onions: In the same pan, add sliced onions and fry until golden brown, then set aside to cool.
  4. Prepare Hot Spices: In the same oil, add green cardamom, thick cardamom, cumin, asafoetida, and star anise, then add chopped onions and fry.
  5. Add Vegetables: Add green chilies, ginger, garlic, and chopped tomato, and cook until oil separates.
  6. Mix in Spices: Add coriander powder, red chili powder, roasted cumin powder, and garam masala, then add whisked curd and salt.
  7. Cook the Mixture: Add hot water, mix well, and cook for 6-7 minutes until spices are well roasted.
  8. Combine Everything: Add the fried nutri and potatoes to the spice mixture, adjust water as needed, and cook for another 4-5 minutes.
  9. Garnish and Serve: Garnish with fresh coriander and serve with roti or paratha.
