Prepare Aamras: In a bowl, mix mango pulp and prepared sugar syrup.
Blend Aamras: Transfer to a mixer grinder and grind into a smooth paste.
Add Ginger Powder: Pour into a bowl, add dry ginger powder, and mix well.
Prepare Sugar Syrup: In a saucepan, combine water and sugar, cook for 5-6 minutes until sugar dissolves.
Prepare Fajeto: In a bowl, mix remaining mango pulp, water, curd, salt, turmeric, and gram flour.
Prepare Tadka for Fajeto: In a handi, heat oil, add bay leaf, cinnamon, cloves, curry leaves, button chillies, mustard seeds, and cumin seeds.
Combine Fajeto: Add prepared fajeto, jaggery, and simmer for 10-12 minutes.
Cook Moong Dal: In a pot, combine soaked moong dal, water, salt, and turmeric, simmer until cooked.
Prepare Tadka for Dal: In a pan, heat oil, add asafoetida, red chili powder, coriander powder, and cooked dal, sauté for 4-5 minutes.
Serve: Transfer everything to serving bowls and garnish as desired.
