Ingredients: 2 1/4 cup (292 g) all_purpose flour 1/4 tsp salt 1/2 tsp baking soda 2 tsp ginger 1 tsp cinnamon 1/2 tsp nutmeg 1/4 tsp cloves 1/2 cup (113 g) unsalted butter, softened 1/2 cup (100 g) light brown sugar 1/3 cup (100 g or 80 ml) molasses 1 large egg 1 tsp pure vanilla extract, optional https://amzn.to/3oWoWs8 (Amazon affiliate) 🌹Instructions🌹 1. In a medium bowl, sift the flour, baking soda, ginger, cinnamon, nutmeg, and cloves. Whisk until combined. Set aside. 2. In the bowl of a stand mixer fitted with the paddle attachment (or in a large mixing bowl using an electric hand mixer) beat together the butter and brown sugar on medium speed until smooth and creamy about 2 minutes. Add the molasses and salt and continue beating until combined about 1 minute. Scrape down the sides and bottom of the bowl as needed. Beat in egg and vanilla until well incorporated about 1 minute. Scrape down the bowl as needed. 3. With the mixer on low speed, add slowly the dry ingredients and beat until just combined. Divide the cookie dough into two equal parts, and place each dough between 2 pieces of plastic wrap. Pat down to create a disc shape. Chill overnight. 4. Line baking sheets with parchment paper and set aside (I used 2 half sheet pans). 6. Remove 1 disk of chilled cookie dough from the refrigerator and place it on a lightly floured surface (I used 1 tbsp flour). Sprinkle the top of the dough with little flour and roll out until 1/4-inch thickness or to a circle about 23 cm in diameters. 7. Using your favorite cookie cutters, cut dough into shapes and carefully place shapes 1 inch apart on prepared baking sheets. Repeat with second disc of dough. Cover and chill while working on the dough scraps. 8. Combine your dough scraps and roll between 2 pieces of plastic wrap and chill in the freezer for 15 minutes, then cut into shapes. Cover and refrigerate with the rest of the cookie dough. 9. Preheat oven to 350 degrees F (180 degrees C) for 10 minutes. Bake 1 sheet at a time on the center rack for 10 minutes (bake more for hard and crunchy cookies).
