Make an amazing Sourdough Sandwich bread in just 2 minutes of work. You will have a mild fluffy bread that has excellent structure and slight taste of dairy fruity notes. Now the idea of this recipe is crazy and comes from my never ending quest of making simple but great bread at home. You just refresh your sourdough starter in a large batch, add a bit of salt, proof it, bake it, done. Too simple right? 🤣 Recipe: - 600g of flour - 300g of water (50%) - 60g of stiff sourdough starter (10%) - 8g of salt (2%) Instructions: 1. Dissolve starter in water 2. Add flour 3. Add salt 4. Mix together until it’s homogenised and you no longer have chunks of flour. You can totally use a stand mixer too5. Place in an oiled loaf pan 6. Wait until doubled in size 7. Bake in non-preheated oven at 230°C (446°F) for around 40 minutes. Place another try on top, or another loaf pan. This helps to have a steamy environment 8. Remove the tray after 40 min and bake another 5 minutes with the tray. If you want to be scientific about it, check the core temperature, it should be at least 95°C (200°F) 9. Done The following is only intended for true bread nerds 🤣. What makes this bread so great? That’s the stiff starter. It favours the yeast a lot more and thus makes your final bread more mild plus giving you more leavening power. If you prefer a sour taste, use your regular starter. In this case I actually used my regular starter that I converted into a liquid starter. This helps to enhance dairy notes and reduce vinegary notes. Afterwards I converted the liquid starter into a stiff starter. This way I removed all of the vinegary notes, having only dairy fruity notes. #sourdough #Shorts
