Raw tamarind rice also popularly known as pulihora or puliyodharai or chitrannam is a common rice preparation in South Indian cuisine. INGREDIENTS: Tender tamarind ½ cup Ripe red chillies 2-3 nos Oil To fry Mustard seeds ½ tsp Ground nuts ½ tsp Chana dal ½ tsp Urad dal ½ tsp Curry leaves 1 spring Asafoetida 1 pinch Turmeric powder 2 pinch Boiled rice 2 cups Banana pepper 1 nos Salt To taste Coriander seeds ½ tsp Rice flour ¼ cup Chickpea flour 1 tbs METHOD: 1. Take a mixie jar and add tender tamarind and ripe red chillies and blend into coarse paste. 2. Heat 1-2 tbs oil in a pan and add mustard seeds, ground nuts, chana dal, urad dal, curry leaves, asafoetida turmeric powder, raw tamarind mixture paste, salt and saute it for 1-2 mins. 3. Add rice and mix nicely and keep aside 4. For crispy chillies: Cut banana pepper into slices and transfer into a bowl. 5. To add salt, crushed coriander seeds, rice flour, chickpea flour, water and mix nicely and deep fry in hot oil until crispy and transfer into paper towel 6. Now raw tamarind rice chitrannam with crispy chillies are ready to serve.
