Easy Puff Pastry Ingredients 250g bread flour 5g salt 125ml cold water 200g cold butter (diced) Method 1. Dissolve the salt into the water. Add flour and diced butter into the stand mixer and mix with the paddle attachment on medium for 1 minute. Add the salt water gradually while mixing until all of the dry bits have been absorbed. There should still be chunks of butter in the mix. 2. Remove the dough from the mixer. Roll into a rectangle (60x25cm) with a flat/french rolling pin. Fold it into thirds (single turn). Cover and place into the fridge for 45 minutes. 3. Remove from the fridge and roll the dough into a rectangle measuring about (70cm x 25cm). Now, fold it into four (double turn). Fold the top of the dough one-quarter of the way down and the bottom of the dough one-quarter up from the bottom until the ends touch each other. Then, fold the entire dough in half. Cover and rest for 45 minutes in the fridge. 4. Repeat step 3 two more times. 5. Remove from the fridge and roll it out once more, and then fold it into thirds (single turn).
