Pakora and Chana Chaat - meet the best of both worlds with the pakora masala cup chat recipe. #happycookingtoyou #foodfusion #digitalammi Written Recipe: https://bit.ly/3MppLIR Recipe in English: Ingredients: Prepare Khatti Chutney: -Imli pulp (Tamarind pulp) ¾ Cup -Lehsan paste (Garlic paste) 3 tbs -Lal mirch powder (Red chilli powder) 1 & ½ tbs or to taste -Ginger powder 1 & ½ tsp -Black salt ½ tsp -Pink Salt ¼ tsp or to taste -Water 1 tbs or as required Prepare Dahi ki Meethi Chutney: -Podina (Mint leaves) 1 Cup -Hara dhania (Fresh coriander) 1 Cup -Hari mirch (Green chillies) 3-4 -Zeera (Cumin seeds) 1 tsp -Falak Pink Salt 1 pinch or to taste -Water ¼ Cup or as required -Dahi (Yogurt) 1 & ½ Cup -Sugar 4-5 tbs or to taste Prepare Pakora Batter: -Gram flour 2 & ½ Cups or as required -Rice flour ¼ Cup -Pink Salt ½ tsp or to taste -Lal mirch powder (Red chilli powder) 1 tsp or to taste -Zeera (Cumin seeds) roasted & crushed 1 tsp -Haldi powder (Turmeric powder) ½ tsp -Ajwain (Carom seeds) ¼ tsp -Adrak lehsan paste (Ginger Garlic paste) ½ tbs -Hari mirch (Green chilli) chopped 1 tbs -Har dhania (Fresh coriander) chopped 2 tbs -Aloo (Potatoes) julienne 2-3 medium -Pyaz (Onion) sliced 2 medium -Cooking oil for frying Assembling: -Safed chanay (Chickpeas) boiled -Chaat masala -Pyaz (Onion) chopped -Tamatar (Tomato) chopped -Nimco sev -Lal mirch (Red chilli) crushed -Hara dhania (Fresh coriander) chopped Directions: Prepare Khatti Chutney: -In a bowl,add tamarind pulp,garlic paste,red chilli powder,ginger powder,black salt,pink salt & whisk well. -If required,add water,whisk well & set aside. Prepare Dahi ki Meethi Chutney: -In a blender jug,add mint leaves,fresh coriander,green chillies,cumin seeds,pink salt,water,blend well & set aside. -In a bowl,add yogurt,sugar,blended green paste,whisk well & set aside. Prepare Pakora Batter: -In a bowl,add gram flour,rice flour,pink salt,red chilli powder,cumin seeds,turmeric powder,carom seeds,ginger garlic paste,green chillies,fresh coriander,potatoes,onion & mix until well combined, cover & let it rest for 10 minutes. -If the batter becomes runny,add 1-2 tbs of gram flour. -On inverted small aluminum cup,place pakora batter & shape it like a small cup. -In a wok,heat cooking oil & fry cups wrapped with pakora batter on low flame until golden & crispy and remove small cup with the help of the tong (makes 11-12). Assembling: -In prepared pakora cup,add boiled chickpeas,chaat masala,prepared dahi ki meethi chutney,khatti chutney,onion,tomato,nimco sev,red chilli crushed,fresh coriander,chaat masala & serve!
