Untuk minyak kulit ayam, panaskan wajan, masukkan kulit ayam dan air, masak hingga sedikit menyusut lalu gunting-gunting, masak hingga menyusut 2. Masukkan minyak goreng, masak hingga setengah kering lalu masukkan bawang merah, masak hingga kering dan kecokelatan 3. Di dalam food processor, masukkan minyak kulit ayam, bawang putih, setengah bagian paha ayam giling, garam, kaldu ayam bubuk, gula pasir, penyedap, merica, baking powder, minyak wijen, telur dan air es, haluskan hingga benar-benar halus dan teksturnya lengket 4. Masukkan sisa paha ayam giling dan udang. Aduk kembali sesaat 5. Pindahkan ke mangkuk kemudian masukkan tapioka dan terigu, aduk rata 6. Panaskan minyak, bentuk bulat bakso lalu goreng sekitar 25 - 30 menit atau hingga matang, angkat dan tiriskan 7. Untuk saus cocolan, masukkan cabai keriting merah, bawang putih dan air ke dalam blender, haluskan 8. Masukkan ke dalam wajan kemudian tambahkan gula pasir, garam, cuka dan saus sambal, masak hingga mendidih 9. Bakso goreng siap disajikan =================== [ENGLISH] Bakso Goreng Recipe (yield 14-20 pcs) Fragrant Oil ingredients: 100 g chicken skin 3 tbsp water 45 ml oil 7 pc shallot, sliced Meatball Dough ingredients: 400 g ground chicken thigh 100 g peeled shrimp 5 clove garlic 1 tsp salt 1 tsp chicken powder 1 tsp MSG 1 tbsp sugar ¼ tsp pepper 100 g cold water 200 g tapioca flour 35 g all-purpose flour 1 pc egg 1 tsp baking powder 2 tsp sesame oil Dipping Sauce ingredients: 4 pc curly red chili 2 clove garlic 2 tbsp chili sauce ½ tsp salt ¾ tbsp vinegar 2 tbsp sugar 150 ml water Steps: 1. For the Fragrant Oil, heat a pan. Add chicken skin and water. Cook until slightly reduced, then cut into small pieces and cook until fully reduced. 2. Add oil. Cook until half-crisp, then add shallots. Cook until crisp and browned. 3. In a food processor, add Fragrant Oil, garlic, half of the ground chicken thigh, salt, chicken powder, sugar, MSG, pepper, baking powder, sesame oil, egg, and cold water. Blend until smooth and sticky. 4. Add the remaining ground chicken thigh and shrimp. Blend briefly. 5. Transfer to a bowl, then add tapioca and all-purpose flour. Mix well. 6. Heat oil. Shape the dough into round meatballs and fry for about 25-30 minutes or until cooked through. Remove and drain. 7. For the dipping sauce, add curly red chili, garlic, and water into a blender. Blend until smooth. 8. Pour into a pan, then add sugar, salt, vinegar, and chili sauce. Bring to a boil. 9.
