Masukkan bawang putih dan bawang merah ke dalam food processor, haluskan 2. Panaskan minyak, tumis bawang putih dan bawang merah hingga sedikit kecokelatan 3. Campurkan air dengan tepung beras, aduk rata lalu masukkan ke dalam wajan 4. Masukkan garam, penyedap, kaldu ayam bubuk, gula pasir dan merica, masak hingga mengental dan matang kemudian pindahkan ke dalam mangkuk 5. Untuk sambal kacang, masukkan bawang putih, bawang merah, kemiri, kacang tanah, cabai merah keriting dan cabai rawit merah ke dalam food processor, haluskan 6. Panaskan minyak, tumis bumbu kacang hingga wangi dan berbusa kemudian tambahkan air, gula merah, kecap manis, daun jeruk, garam dan kaldu jamur, masak hingga air berkurang setengahnya 7. Sisihkan daun jeruk dan blender halus sebagian sambal kacang. Masak kembali kemudian masukkan larutan tapioka, masak hingga mendidih dan mengental 8. Setelah adonan biang dingin, masukkan telur, kecap asin, terigu dan tapioka, aduk hingga rata 9. Cincang daun bawang dan campurkan ke dalam adonan, aduk rata. Pentol dos siap disajikan =================== [ENGLISH] Pentol Dos Recipe (yield 70-80 pieces) Starter ingredients: 5 clove garlic 5 pc shallot 50 ml oil 350 ml water 120 g rice flour 1 tsp salt ¼ tsp pepper 1 tbsp chicken powder 1 tsp MSG 1 tbsp sugar 3 tbsp soy sauce 2-3 pc green onion Dough ingredients: 1 pc egg 250 g tapioca flour 50 g all-purpose flour Peanut Sauce ingredients: 4 pc shallot 2 clove garlic 1 pc candlenut 4 tbsp oil 50 g fried peanut 2 pc red Thai chili (optional) 3 pc curly red chili 2 pc kaffir lime leaf 500 ml water 1.5 tbsp sweet soy sauce 1 tsp mushroom bouillon 1 tsp salt 1.5 tbsp palm sugar 1.5 tbsp tapioca flour Add-ons: Lime Steps: 1. Place garlic and shallots into a food processor. Blend until smooth. 2. Heat oil. Sauté garlic and shallots until lightly browned. 3. Mix water with rice flour, then add to the pan. 4. Add salt, seasoning, chicken powder, sugar, and pepper. Cook until thickened and cooked through, then transfer to a bowl. 5. For the Peanut Sauce, place garlic, shallots, candlenut, peanuts, curly red chili, and red Thai chili into a food processor. Blend until smooth. 6. Heat oil. Sauté the mixture until fragrant and foamy, then add water, palm sugar, sweet soy sauce, kaffir lime leaves, salt, and mushroom bouillon. Cook until the water reduces by half. 7. Set the kaffir lime leaves aside. Blend part of the Peanut Sauce until smooth. Cook again, then add the tapioca slurry. Cook until boiling and thickened. 8. Once the starter mixture is cool, add egg, soy sauce, all-purpose flour, and tapioca flour. Mix well. 9. Chop green onions and mix them into the dough. Mix well. Shape the dough into balls, then boil until they float and are cooked through. Drain and add a bit of oil. 10. Skewer the balls with satay sticks and fry until crisp, then drain. 11.
