Serves 8-10 Recipe in English: Ingredients: -Water 2 Cups -Chawal (Rice) basmati tota 1 Cup (soaked for 15 minutes) -Zafran (Saffron strands) ¼ tsp -Hari elaichi (Green cardamom) crushed ½ tsp -Olper’s Milk 1 & ½ litre -Badam (Almonds) peeled & sliced ¼ Cup -Kewra water 1 tsp -Milk powder ½ Cup -Sugar ¾ Cup or to taste -Khoya ¾ Cup -Badam (Almonds) sliced -Chandi warq (Edible silver leaf) Direction: -In a wok,add water,rice,saffron strands,green cardamom,mix well & bring it to boil,cover & cook on low flame for 15-20 minutes & stir in between. -Turn off the flame & mash well with the help of masher. -Add milk & mix well. -Add almonds,kewra water,milk powder,turn on the flame,mix continuously & cook on low flame for 15-20 minutes. -Add sugar,mix well & cook on low flame until it reduces to desired consistency (4-5 minutes),stir continuously -Add khoya & mix well. -Place wok on ice cubes & let it cool while whisking. -In a serving dish,pour kheer & garnish with almonds & edible silver leaf. -Refrigerate until chilled. Recipe in Urdu: Ajza: -Water 2 Cups -Chawal (Rice) basmati tota 1 Cup (soaked for 15 minutes) -Zafran (Saffron strands) ¼ tsp -Hari elaichi (Green cardamom) crushed ½ tsp -Olper’ s Milk 1 & ½ litre -Badam (Almonds) peeled & sliced ¼ Cup -Kewra water 1 tsp -Milk powder ½ Cup -Sugar ¾ Cup or to taste -Khoya ¾ Cup -Badam (Almonds) sliced -Chandi warq (Edible silver leaf) Direction: -Karahi mein pani,chawal,zafran aur hari elaichi dal ker ache tarhan mix karein aur ubal anay ka bad dhak dein aur halki ancch per 15-20 minutes kliya paka lein & bech bech mein mix kertay rahein. -Chulha bund ker dein aur masher ki madad sa ache tarhan mash ker lein. -Doodh dal ker ache tarhan mix karein. -Badam,kewra water aur milk powder dal dein,chulha on karein aur musalsal mix kertay hoye halki ancch per 15-20 minutes kliya paka lein. -Cheeni dal ker ache tarhan mix karein aur halki ancch per desired consistency ajanay tak paka lein (4-5 minutes) aur musalsal mix kertay rahein. -Khoya dal ker ache tarhan mix ker lein. -Karahi ko ice cubes per rakh dein aur whisk kertay hoye thanda ker lein. -Serving dish mein kheer dal dein,badam aur chanqi warq sa garnish ker lein. -Thanda ho janay tak refrigerate ker lein.
