Chocolate Covered Prunes | Minimalist Baker Recipes

Our secret love for PRUNES 👵🤫 is now...not so secret! Introducing: CHOCOLATE COVERED PRUNES 🍫 – a sweet, chewy, fruity, nutrient-rich snack that's ridiculously EASY to make with just 3 ingredients! 🙌 Where are our fellow prune lovers at (leave a comment!)? INGREDIENTS: • 8 pitted prunes (we like Trader Joe’s non-sorbate pitted prunes) • 1/3 cup dark chocolate chips (or chopped chocolate) • 2 teaspoons salted creamy peanut butter • Optional: Flaky salt INSTRUCTIONS: 1. Find a plate that will fit in your freezer and line it with wax or parchment paper. Place pitted prunes on the wax- or parchment-lined plate. 2. Place chocolate chips (or chopped chocolate) in a microwave-safe bowl and melt in the microwave in 20-30 second increments, stirring in between to encourage melting. You can also do this on the stovetop in a stovetop-safe bowl set over a small pot of hot water. 3. To the center of each prune, add ~1/4 teaspoon of peanut butter. 4. Once the chocolate has melted, transfer your peanut butter prunes (one at a time) to the bowl of melted chocolate and fully coat with chocolate. 5. Place the chocolate-coated prunes back on the wax- or parchment-lined plate, sprinkle with flaky salt (optional), and place in the freezer to set the chocolate - about 10-15 minutes. Enjoy! 6. Once set, you can transfer any leftovers (if there are any 😉) to the refrigerator. Or, if storing in the freezer, let sit out for 5-10 minutes at room temperature before enjoying. FOLLOW US!
