Basics: How to feed your sourdough

In this video you will learn how to feed your sourdough. The sourdough that you store in your fridge is named mother dough. For most sourdough recipes you need parts of your mother dough mixed with flour and water. This is then called the sourdough starter. It's quite simple. Depending on how much starter you need, adjust the quantity of mother dough, flour you feed and water. Important. Always feed 1:1 water and flour. You want the starter to have 100% hydration. Example formula: - You need 160 grams of sourdough starter for the bake - Use 80 grams of mother dough - Feed it with 85 grams of flour, 85 grams of water - You will have 250 grams in the end - Wait 3 hours - Take out 160 grams as your starter - Put the rest back in the container of your mother dough Note how we added a little more than we need. This is because the yeast will literally eat away parts of your dough. Around 5% in total. That's why you always have to make a little more than you need. That's why larger bakeries prefer to use baking powder, as it is more profitable.
