Apricots, roughly chopped (optional) खुबानी 4 cups Water, पानी 1 tbsp Saffron water, केसर का पानी 1 cup Sugar, चीनी 3 no. Cloves, लौंग 2 no, Green cardamom, हरी इलायची ½ cup Water, पानी Fried nuts, तले हुए मेवे ¾ cup Sugar, चीनी Little water, पानी For Frying Nuts 2 tbsp Ghee, घी 10-12 no. Pistachios, पिस्ता 10-12 no. Almonds, cut into halves, बादाम ¼ no. dry Coconut, sliced, सूखा नारियल 10-12 no. Cashew Nuts, काजू ¼ tsp Fennel seeds, सौंफ़ ¼ tsp Black peppercorns, crushed, कुटी हुई काली मिर्च For Garnish Mint sprig, पुदीना पत्ता Fried nuts, तले हुए मेवे Process For Meethe Chawal ● In a small kadai or handi, add ghee, once it's hot, add sella basmati rice and saute for a minute. ● Add apricots, water, saffron water, sugar, cloves, green cardamom, water and mix well. ● Now, cover it with the lid and let it cook for 12-15 minutes on low flames or until it's cooked well. ● Finish it with fried nuts, remaining sugar, little water and give it a good mix. ● Turn off the flames and transfer it into the serving bowl or dish and garnish it with mint sprig, fried nuts. ● Serve hot.
