It is a combination of several different rums including a coconut rum and the somewhat unusual addition of a coffee liqueur. The coffee liqueur helps amplify the dark, rich toffee, chocolate and coffee notes of the rum - I used a mix of Plantation 5yr, Plantation OFTD (69%) and a coconut rum. It is a sweet cocktail due to the large measure of pineapple juice but lurking in the background are notes of rich chocolate, coffee and coconut. Many Bahama Mama recipes have evolved by omitting the coffee liqueur and substituting in grenadine but as far as I know, this is closest to the original.
