AMAZING and EASY OVERNIGHT SOURDOUGH

In this video I am showing you how to make an amazing and very simple overnight sourdough. The dough will ferment while you are sleeping, making the full recipe very easy to follow, especially if you are busy during the day. We will be making both a boule and a batard sourdough. They have the same source dough but are then just shaped differently in the end. The goal of this recipe is to have as little work as possible, henceforth we are doing it overnight. Now if you have little time and want to get something awesome, this is the perfect recipe. Recipe: 1) 500 grams of flour per loaf 2) 325 grams of cold water per loaf (65%) 3) 100 grams of sourdough starter per loaf (20%) 4) 10 grams of salt per loaf (2%) Typically I only bulk ferment for around 5-6 hours with my level of sourdough activity. Since overnight fermentation times are are more around 7-8 hours I am using a little less humidity. The longer you ferment the more sticky your dough will become. To counteract this effect we are reducing the humidity a little bit, having a stronger gluten network. Hope you enjoy the video.
